In today's economy it can be hard to eat well on a budget. Instead of going out to a local restaurant, impress the one's close to you by cooking a delicious meal. The recipe included is a great way to cut costs without cutting taste.
Chicken Pesto Pasta
2 roma tomatoes remove inside and slice ($.86)
½ yellow onion, sliced ($.80)
½ green pepper, sliced ($.79)
½ lb of rottini noodles ($1.49)
1 garlic clove minced ($.49)
4oz. pesto sauce ($2.50)
½ boneless skinless chicken breast, cut in bite size pieces ($1.74)
Total cost= $ 8.67 Cost per serving= $1.73
1. Bring a large pot of water to a boil. Add pasta and cook for 10 minutes till noodles appear soft.
2. In a large skillet sauté garlic, onion, green peppers, and tomatoes.
3. Cut chicken and rub with pesto sauce, add to skillet.
4. Add noodle to the large skillet. Add the rest of the pesto, and mix to evenly coat.
Grilling the chicken before adding or adding some garlic toast could be a great way to add taste to the meal.
